Happy National Crab Meat Newburg Day!

Vegan Crab Meat Newburg.  IMPOSSIBLE you say?!  But watch.

First, head over to the westbank and pick up one of these bad boys from Hong Kong Market:

 (Yes, that *is* a pile o' jackfruit the size of watermelons.)  OR get some canned young green jackfruit in brine, one pound's worth.  Next, follow this recipe, substituting a pound of chopped up jackfruit flesh (or the canned stuff) for the crab meat, and using vegan butter, sour cream, parmesean, and sherry.

And tell me how it turns out!
