Happy National Pineapple Upside-Down Cake Day!
F*ck yeah pineapple upside-down cake! I think I've only ever eaten it once or twice, but it's just so brilliant and nostalgic and fifties and sweet and good. And this one that I just made is delicious! The cake itself is very plain, and I am thinking that next time I might add a bit of rum extract. Also, I used frozen cherries (rather than maraschino), which is why my cake looks tie-dyed. Regardless, I am happier for having it in my life, and you will be too. Check it out:
