Happy National Lobster Newburg Day!

Today we have a serious veganizing challenge: Lobster Newburg.  This is a nut that I must admit I cannot crack.  It seems plausible to find some vegan "lobster," probably frozen, though at the moment I can't find any.  But then there's the heavy cream.  And if you can get past that, there's the eggs.

I have some vague ideas about a cashew creme base...

I am 100% positive that it can be done, and that it probably has been done to great effect.  But today, let's see how beautiful live lobsters are:
