Blueberries are my favorite berry. They're just so... bizarre! I mean think about it. What else do you eat that even approaches this color? The flavor is subtle, yet pungent and distinct. And apparently they are superfood-level healthy. You just cannot lose when it comes to this fruit.
During the summer you can stop by one of the Crescent City Farmer's Markets and get beautiful local blueberries like those pictured here. But to make today's popovers, frozen berries should work just fine.
This recipe should be easy to veganize - just use soy milk and earth balance! Bananas should work well as the "egg substitute." Enjoy!
